Chayote with Green Onions
 
 Ingredients:
2 medium chayotes, peeled.
1 tsp. margarine
4 medium green onions, thinly sliced and seperated into white
and green parts
1/4 tsp. salt
1/8 tsp. ground nutmeg
Parmesan cheese (optional)
additional green onions (optional)
 
1. Cut chayotes crosswise into slices,
cutting the large center slices in half
 
 2. Heat margarine in a shillet over medium heat. Add chayotes
and white parts of onion, stir until tender, about 5 minutes.
Reduce heat if needed.
Avoid browning.
 
3. Add green parts of onion, saltand nutmeg. And pepper to
taste. Toss for 1 minute. Serve hot, sprinkle with cheese and
additional onon if desired.
