Chicken Enchiladas
Ingredients:
2 Cups chopped chicken
1 Cup chopped green bell pepper
1 8oz Package cream cheese, cubed
1 8oz jar of salsa, divided
8 6 inch flour tortillas
3/4 Pound grated sharp cheddar cheese
1/4 Cup milk
1. Stir chicken, cream cheese, bell pepper and 1/2 cup of salsa
in a
saucepan on low heat until cream cheese is melted.
2. Spoon 1/2 cup of chicken mixture down the center of each
tortilla; roll up.
Place tortillas seam side, in lightly greased 12"x 8" baking dish.
3. Stir grated cheddar cheese and milk in saucepan over low
heat until smooth.
Pour sauce oved tortillas; cover with foil.
4. Bake at 350*F for 20 minutes or until throughly heated.
Pour remaining salsa over tortillas.
Makes 4 to 6 servings.
