Coconut Crunch Apple Pie
 
 
Ingredients:

1. Mix together flour and salt. Cut in shortening until the size of
small peas.
 
2. Mix in water by tablespoons until a soft dough is formed.
 
3. Roll out dough on a floured board. Sprinkle with coconut and
roll in.
 
4. Place crust into 9 in. pie pan. Flute edges or press with fork
tines.
 
Crust:
1 1/2 cups all-purpose flour
1/2 Tsp salt
1/2 Cup shortning
5 to 6 Tbsp cold water
1/4 Cup shredded coconut
 
Filling:
4 Cups peeled and sliced apples
1/2 Cup sugar
1/2 Tsp cinnamon
2 Tbsp all-purpose flour
 
Topping:
1/2 Cup all-purpose flour
1/4 Cup brown sugar, packed
1/2 Tsp cinnamon
1/4 Cup butter or margarine, softened
1/2 Cup shredded coconut
1/2 Cup chopped walnuts
 
5. Mix filling ingredients and turn into crust.
 
6. Mix flour, brown sugar and cinnamon. Mix in butter, then
coconut and walnuts.
 
7. Sprinkle evenly over pie.
 
8. Bake at 400* for 40-45 minutes
 
9. Allow to cool before cutting.
