Glazed Onion Rings
Ingredients:
4 To 5 Large white or Bermuda onions
2 Tbsp butter or margarine
2 Tbsp vinegar
2 Tbsp brown sugar
1 Tsp curry powder
2 Tbsp chopped parsley
Salt, pepper, and paprika
Sliced red chilli pepper for garnish (optional)
1. Peel onions and cut into even thin slices.
2. Heat butter in large skillet.
3. Add onion and toss for a few minutes until coated with butter. Do Not Brown!
4.Add vinegar, brown sugar, and curry powder. Stir to blend well. Add parsley.
5. Cover and cook onions for about 5 minutes, until onions are almost tender crisp.
6. Remove cover. Cook onion for 2 to 3 minutes until glazed.
7.Season with salt, pepper and paprika. Add chilli peppers for garnish if you wish.
8. Serve onions hot as a side dish or cold as a topping for greens or potato sald.
