Red Velvet Cake
Ingredients:
Red velvet cake:
2 1/2 cups self-rising flour
1 cup buttermilk
1 1/2 cup vegetable oil
1 tsp. baking soda
1 tsp. vanilla extract
1/4 cup (2-1oz. bottles) red food coloring
1 1/2 cup granulated sugar
1 tsp. unsweetened cocoa powder
1 tsp. white vinegar
2 lg. eggs
1.Pre-heat oven to 350*. Mix together all ingredients with
electric mixer.
2. Spray three 9 inch round cake pans with non stick coating.
3. Pour batter equally into each. Bake for 20 minutes; cool
layers in pans for 10 minutes, carefully remove cake from pans
and set aside to cool completely on wire racks, before frosting.
Frosting:
1/3 lb. or 1 1/3 stick butter,softened
10 oz. cream cheese, softened
1 lb. confectioners sugar
2 cups chopped pecans
Combine butter, cream cheese and sugar in a bowl; beat until
fluffy, then fold in 1 1/2 cups of the pecans, use to fill layers
and frost cooled cake. Decorate top of cake with remaining
pecans.
note: Refridgerate at least 1 hour before serving.
