Southern Oven Baked Pork Loin
 
 
Ingredients:
2 to 2 1/2 lbs. fresh pork loin, bone in.
 
Basting sauce:
 
1/2 cup chopped onion
1/2 cup chopped celery
2 Tbsp. butter
3 Tbsp. tomato puree
2 Tbsp. cider vinegar
2 Tbsp. molasses
 
1. For basting sauce, saute' onions and celery in butter until
soft.
 
2. Add tomato puree, vinegar and molasses. Blend well.
 
3. Place meat on a roasting rack in pan. Brush with part of
sauce.
 
4. Bake at 350* for about 1 1/2 hrs. or until pork is tender and
juices run clear when pierced with fork. Brush with sauce time
to time during cooking. Cooking time depends on thickness of
meat.
 
This pork loin taste almost  barbecued since it is baste with
tangy sauce during cooking time in oven.
 
 Yor may add more celery to pan when cooking the pork, if
desired. Celery gives it a tangy flavor.
