Twice Baked Potatoes
 
Ingredients:

4 Baking potatoes
3 Green onions, thinly sliced
2 Tbsp butter or margarine
1/2 Cup milk or half and half, hot
1/2 Tsp salt
Dash black pepper
Dash nutmeg
Dash paprika
4 Slices bacon
2 Tbsp Parmesan cheese, grated
2 Tbsp sharp chedar cheese, grated
 
 
1. Wash potatoes, Pat dry with paper towel.
 
2. Prick potatoes with a fork in a few places.
 
3. Bake potatoes at 400*F for about 1 hour or until potatoes are done.
 
4. Cut a thin slice from the top of each potato. Scoop out the pulp into a bowl.
 
5. Mash the potato pulp with the hot milk or half and half until fluffy. Beat in the butter and the green onion. Add seasonings.
 
6. Fry the bacon until crisp. Crumble bacon and add to potato mixture.
 
7. Spoon potato mixture back into potato shells. Sprinkle with both cheeses.
 
8. Place potatoes on baking sheet. Bake at 375*F for about 15 minutes or until cheese is melted and piping hot.
 
Makes 4 servings.
